Rhubarb

With it's bright red stalks, huge green leaves, and interesting white flowers, Rhubarb is a very nice ornamental to add to your yard and also makes a great ground cover to keep down the weeds. The stalks are tasty with a tart, fruity flavor that many people love to use in baking and preserves, but which also taste great in soups! Despite it's fruity flavor, Rhubarb stalks are actually a kind of extremely hardy perennial vegetable.
Rhubarb is hardy to -40°F (USDA zone 3) or below and prefers full to half day sun and well drained soil. Plants can grow 3-4 feet tall, 5-6 feet wide and can produce 5-10+ pounds of stalks at maturity. Will produce best if flower stalks are removed when they appear and if given plenty of nitrogen via mulch or fertilizer.

Crimson Cherry: Reddest variety. It produces brightly colored red stalks with the unique characteristic of being red throughout under normal temperature and moisture conditions of the Pacific Northwest. Best commercial variety in the Pacific Northwest.
